Sean Lawford was the first guy I met on my first day as line cook in my first restaurant job right out of college. This is my first chef knife design. Just makes sense.
52100 High Carbon Steel

Brass liners and black fiber spacers with brass pins.
14.75" overall length . 9" blade . 3/32" thick at spine . 2" deep at heel . 5" handle .
Hand wash only with water and mild detergent. Towel dry.
Never wash in dishwashing machine.
If the wood starts to feel dry, coat with thin film of oil and beeswax then buff for luster.
