Lawford
The Lawford is a true workhorse — big, balanced, and built to move. Named after Sean Lawford, the first guy I met on my first day as a line cook in my first restaurant job, it only makes sense that this is also my first chef knife design. It’s made to feel familiar, reliable, and ready for anything — just like Sean was on day one.
-
52100 High Carbon Steel – Tough, wear-resistant, and takes a razor-sharp edge. This steel is made for real kitchen use and only gets better with time.
-
9” Blade, 14.75” Overall Length – German-style profile with a bit more belly, perfect for rocking cuts, slicing, dicing, and handling whatever the board throws your way.
-
3/32” Spine Thickness, 2” Deep at Heel – Thin enough for precision, stout enough for power. Gives you control without feeling fragile.
-
Full-Sized Feel – Substantial in the hand but balanced for long prep sessions.
The Lawford is the kind of knife that earns a permanent spot on the board. It’s not just your main blade — it’s the one you reach for without thinking.
Hand wash only with water and mild detergent. Towel dry.
Never wash in dishwashing machine.
If the wood starts to feel dry, coat with thin film of oil and beeswax then buff for luster.
